Strange craving.
May. 29th, 2012 07:31 pmI don't like pancakes. I haven't for most of my life. I don't know why; they're a perfectly serviceable breakfast item. Waffles will always be my preference. It must be a texture thing.
Tonight, I had a craving for pancakes. Besides the obvious o.O of that, there's also the other big problem with pancakes, namely the number of them a batch makes. Since I don't like pancakes, why would I want a billion of them?
So, I whipped up a single serving of whole wheat pancakes. Instead of having it for dinner, I had it for dessert - added chocolate chips and topped with a bunch of fresh strawberries, slightly cooked to make a syrup of sorts. Mmmm, pretty good!
1/4 cup flour
pinch of salt
dash of cinnamon
1/2 tsp baking powder
1/4+ milk of your choice (coconut, cow's, soy, almond...)
Mix dry ingredients. Add milk and mix just until the wet and dry are incorporated. Voila, one pancake.
Even as a pancake-hater, I don't get why anyone buys Bisquick. Pancakes and biscuits are super easy and fast from scratch.
(I made cheesy garlic biscuits yesterday. Hehe.)
