Also, the answer about what to do with a gallon of extra marshmallow fluff was simple: s'mores semifreddo. No pics, but oh my. Ridiculous and ridiculously easy.

Equal parts heavy whipping cream, whipped with cocoa and a hint of sugar, and marshmallow fluff. Add in some crushed graham crackers (or graham cracker cookies) and chocolate flakes...

Just fold the whipped cream into the fluff, then gently fold in the crumbs and flakes, seal up tight and stick in the freezer and you have an amazing treat.
