Time to make the doughnuts

No, no doughnuts. I still rue that I had enough willpower to not buy a doughnut pan several years back, though. I'm convinced I can concoct a baked version that would be killer. But I suppose that's beside the point.
It's 1:15 AM, I'm wound up from excess caffeine on my one caffeine day, plus sleep patterns that are completely jacked up (stupid effing Roy - it's apparently a spring/summer thing for him to fling himself on me at 4 AM without fail; am I a prude for not wanting to love anyone or anything at that hour? anyway, the wake up calls start then and don't end until 7, which means I roll back into bed after. and with no reason to get up...).
Anyway, what else to do at this hour but bake some brownies? Just kidding. I made these during the daylight hours.

Grain free brownies with a definite peanut butter taste. I cobbled this together based on the billion and one recipes online for gluten and/or grain free brownies, so it'll be pretty much what you can find on great blogs/sites dedicated to eliminating grains specifically from your diet.
Ingredients:
1 c peanut butter
1 egg
2/3 c honey
1/4 tsp salt
1/2 tsp baking soda
1/4 c cocoa powder
Directions:
Beat peanut butter to fluff it up and smooth it out if you use natural. Add the egg and honey, mix until incorporated. Add salt, baking soda and cocoa powder. Spread batter in a greased 8x8 square pan and bake at 325F for 20-25 minutes. Let cool, cut and nomnomnom.
If I'd had any, I'd have added chocolate chips or chunks to the batter. Alas, all I have in solid chocolate form at the moment are some Peppermint Patties chillin' in the freezer and methinks peppermint and peanut butter aren't a match made in heaven. I could be wrong. Didn't want to chance it.
I'm fairly sure you can use your favorite nut butter, and that ones with a weaker taste than PB would give you a nice, dense brownie without the overwhelming note of the old goober peas. ;)
