I made these the first time five years ago, but they were a flop. They're slightly less floppy this time around. Not perfect-looking by any means. Still kinda cute!

I only wish I'd figured out how easy it is to make my own colored sanding sugar before I spent $5 on a tiny bottle. Oh well!

The components of these are all winners. I cut back on the sugar and fat in the cupcakes, figuring the caramel filling and cream cheese frosting would be plenty sweet. The caramel is ... well, yum. And I know zero people who don't like cream cheese frosting with a spice cake.

Now if I only had a personal assistant to come do the dishes and mop up the kitchen floor. What they don't show you on cooking shows is how much ends up on the floor. Flour, powdered sugar, sprinkles. A glop of caramel landed on my foot at some point.

Or maybe I'm just a slob.
