Caramel Filled Apple Cupcakes

I made these the first time five years ago, but they were a flop. They're slightly less floppy this time around. Not perfect-looking by any means. Still kinda cute!

I only wish I'd figured out how easy it is to make my own colored sanding sugar before I spent $5 on a tiny bottle. Oh well!
I've spent the day baking and decorating, starting with baking the apples for the cakes. Galas were on sale, or I'd have gone with Granny Smiths. I have enough caramel and frosting left, I might just pick up more apples for another batch of these...

Last time, I cheated and thought I could just use caramel sauce for ice cream. It absorbed into the cakes. This time, I still cheated with soft caramels melted with a bit of milk.

Much better! I want to dive into that lake of caramel.

After hours of work, I chose to skip making leaves. I still think they look appley enough, don't you?

The components of these are all winners. I cut back on the sugar and fat in the cupcakes, figuring the caramel filling and cream cheese frosting would be plenty sweet. The caramel is ... well, yum. And I know zero people who don't like cream cheese frosting with a spice cake.
Now if I only had a personal assistant to come do the dishes and mop up the kitchen floor. What they don't show you on cooking shows is how much ends up on the floor. Flour, powdered sugar, sprinkles. A glop of caramel landed on my foot at some point.
Or maybe I'm just a slob.
