Okay, background: I can't leave any food out, or cats chew on it. Well, ROY chews on it. Earlier this week, I grabbed a tortilla for lunch and forgot to put the last one back into the drawer. I discovered this when I came home that evening and found an empty, chewed up bag in the middle of the living room floor. I presume a cat (ROY) knocked the tortilla onto the floor during his attempt to gnaw it, and then Walter took over. Ate the bag, ate the whole tortilla. No ill effects, don't worry. Dog seems to have a cast iron stomach.
More background: since I don't typically eat breakfast due to fasting and I do not fast on Saturdays, I have developed a pretty serious addiction to breakfast burritos on said day. Can't have those if your last tortilla was scarfed down by a cat and a dog. Last night, I decided at 11 PM to go ahead and make a couple of tortillas so I'd have them at the ready for breakfast. That's how strong my will to burrito is. I made some, using half wheat flour and half almond flour so I could pretend they are reduced carb. Haha.
Oh my. Bad idea. Why? Because nothing triggers the belly like the smell of warm bread. Yep. I broke fast for the first time in four years, hoovering half of the first tortilla while it was still fresh and warm. I felt bad about it for a second, but oh my - while the addition of almond flour makes them less structurally sound, these are the best tortillas I have ever made. Totally worth falling off the wagon.
