Ice cream and sandwiches

Still on my no churn ice cream kick. This time: peanut butter ice cream with chocolate-covered caramel pretzels.

I really have to watch the sugar, though. My dad is full blown diabetic now, and believes he's reached an age where he doesn't have to adhere to any kind of diet. Which is all well and good, but my dad's never adhered to any kind of diet, diabetes being a direct result of that, so there's a flaw in his thought process. So far, I'm testing just fine, but I have to be careful. I am most definitely backing off of the processed foods - I'm the sort who will buy Progresso when it's on sale, for quick meals when I just can't be bothered to cook. Thing is, eating a can of soup makes my stomach get unhappy really fast.
Potatoes will be my downfall. I love potatoes sooooo much.
Annnnyway. Here's an Abe sandwich. Zero calories!

*sigh* And back to work tomorrow. Guys, I didn't miss my job at ALL this past week. Not one single, solitary moment. Needs must, but I wish I could be one of those types who looks forward to their work.
Oh, and happy new year!
