No churn pumpkin ice cream

superbadgirlWhen I was a kid, my mom would make pumpkin ice cream at Thanksgiving (US). It was a highlight. It involved store bought vanilla ice cream being softened into workable consistency, spices and pumpkin mixed in and then the finished ice cream being set in a cake pan with a graham cracker crust. In more recent years, some of my siblings have attempted to make this with varied results.
I decided it's pumpkin season, I had leftover pumpkin and a few spare cookies from my pumpkin snickerdoodles...
My mom's version seems a bit fussy to me, so I opted for the fake ice cream trick: a can of sweetened condensed milk mixed with 1/2-3/4 cup pumpkin puree and spices and two cups of heavy whipping cream. Ice cream purists probably shudder at the thought, but, y'know, for some of us buying an ice cream machine is not practical.
Anyway, it turned out yummy:
Abe, as it turns out, is nutso for pumpkin. He literally followed my every move with this bowl and watched like a hawk until I finished the (admittedly maybe too large) serving so he could clean up after me. Which he did. Don't judge - that cat has replaced my need to presoak and/or scrub all kinds of things. LOL.
