If you like gingerbread and you like cake doughnuts, you really oughta invest in a doughnut pan and make these baked gingerbread doughnuts. Mine looked nowhere near so perfect - I had some glaze issues because I tried to increase the amount without actually measuring all that well. I had maybe three fully glazed ones that were presentable. The rest, the glaze slid right off and decorated my kitchen counter.

These would also be fantastic with some kind of loose cream cheese frosting.

I did halve the fat by using applesauce, and because that also added some natural sugar, I skimped on the brown sugar too. I also had no cloves so I used black pepper. Don't look at me like that. It's really okay to put pepper in some spiced baked treats. Adds a little kick.

Seriously, these do not take long and would be a great breakfast for the holidays! Mmmm, doughnuts.
