Truffle-filled chocolate cupcakes

Chocolate truffle, not truffle truffle. ;) As a thank you for those who helped me move, I offered baked goods. No one bit until Friday, when a coworker whose husband and friend did most of the heavy lifting asked for something chocolate. Et voila! Chocolate cupcakes with a truffle in the middle and chocolate whipped cream frosting.

The truffle is so easy - basically, it's equal parts good chocolate, melted and scalded heavy cream or heavy whipping cream (I used the latter because I needed it for the frosting, eh?).

Goes in soft and then will turn into an actual truffle ball when cooled. Mmm.
You know what? My favorite chocolate cupcake recipe is a vegan one. It domes up so prettily, and is dense enough to handle filling. You can pick whatever chocolate cake recipe you like.

Goopy frosting, but so delicious I forgive it. It's likely my fault, as I estimated measurements.

I'm still struggling to understand the oven. Sometimes it works like a charm, other times it seems like it takes twice as long to cook things as it should. I'm just glad these came out just right!
In other news, I cannot sit down for more than half a second before Roy will race toward me to curl up. Sit down. THUMP, skitter, skitter, pad, skitter, and there he is. The only thing missing is him shouting, "Dibs, I call dibs!" as he runs.
