Kolaches II!

It's Sunday. I had to bake. Actually, it's apparently tradition for a breakfast potluck to happen when a new person joins the organization. We've got a newcomer starting tomorrow. And even if someone made that up and I'm the only one bringing treats because I got punked, I'm okay with it.
Because:

I used a different recipe for the dough - it's similar, of course, but it came out much nicer this time.
1 package (1/4 oz) active dry yeast
1/4 cup warm water (110 to 115 degrees)
3/4 cup warm coconut milk (110 to 115 degrees)
1/3 cup sugar
1/3 cup organic shortening
1 teaspoon salt
1/8 teaspoon ground cinnamon
2 eggs
1 cups white whole wheat flour
@3 cups all-purpose flour
In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening, salt, nutmeg, eggs, and 2 cups flour; beat until smooth. Add enough flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes*. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down. Divide in half; shape each half into 12 balls. Place 3 inches apart on greased baking sheets. Flatten each ball to a 3-inch circle. Cover and let rise in a warm place until doubled, about 30 minutes.
Make a depression in the center of each roll; add a rounded tablespoon of filling. Bake at 350 for 10-15 minutes or until golden brown. Remove from pans to wire racks for cooling.
I whipped up a lemon curd and totally cheated with cherry pie filling for the cherry. Hah.
*here is where a KitchenAid with a dough hook becomes my bestest friend
The left side of my oven runs hot. It's so frustrating to try to create lovely, evenly baked items when the hot spots are ridiculous.

What else did I do this weekend? Cleaned the kitchen for the first time since early May. BOUGHT FRESH VEGETABLES BECAUSE I DON'T HAVE TO BE OUT OF TOWN THIS WEEK.
Shopped for deck furniture. I have a narrow little patio area and I really wanted to get a bistro set or something. Maybe someday I will. In the meantime, I went to the local lumber store and bought two plastic Adirondack chairs and a wee little table. I had to ask if I could haul one out to the car. Dixie is tough and scrappy, but she's tiny and I didn't want to buy the chairs and not be able to fit them in. It took a bit of muscle and elbow grease, but I got 'er done.
It was a very uncomfortable drive back home, though. The chairs took up the passenger seat and about 1/3 of the driver's.

I feel accomplished. And tired.
