Oh, I baked.

Today I worked four hours remotely. Before I did that, I hiked to downtown to check out the lone cake shop there. I hoofed it two miles (four round trip) only to discover the establishment is not open on Mondays! What's a gal to do? Bake her own cupcakes while working remotely and cleaning up puke from a distressed cat, of course.
I. Can. Do. It. All.
I lightly modified this recipe, if anyone wants to try these and you should.
All I really did was swap in 1 c. almond milk for the dairy and 1 1/2 c. whole wheat flour for the AP flour, and also added chocolate chips. I upped the liquid because whole wheat flour can be really dry. Normally, I'd sub in something for the butter, but I hadn't actually planned on baking so early into my residence here and didn't buy any. So, these are ridiculously unhealthy beasts. I intended on saving them for a weekly splurge. Turns out MONDAY IS SPLURGE DAY.
Icing is a basic vanilla buttercream, except extra vanilla-y due to use of vanilla extract and one whole vanilla bean. (For a 12 cake batch of frosting, that's a lot of vanilla.)
Here's an unbaked cupcake - looks like cookie dough!

Baked, not iced. Fairly sure these need no icing!

The cupcake stands alone.

Everybody in the pool!
