Oh, uh, I did it again.
May. 13th, 2012 07:55 pmThis week's baking project: cookies and cream cupcakes. Basically, your favorite chocolate cake recipe, enhanced with chocolate sandwich cookies and utter, utter ridiculous decadence. For real.
I used applesauce for part of the fat, whole wheat flour and unrefined sugar just to make myself feel better about them, even if I'm not going to eat any but the one I had to test out for myself to make sure they were safe for public consumption. Let's face it, anything that's chocolate cake on top of a chocolate cookie and topped with buttercream isn't going to be healthy no matter how hard you try.
I pretend that by eating brown rice, chicken and veggies for dinner, the cupcake didn't do damage. Hahaha.

And I didn't gob up the frosting, though by the end it was getting a little soupy. I have no idea how the pros do it and make it look good. Still, this victory is mine.
