Two bakes in one weekend? Whatever is the world coming to?!

If a person had ambition, the marshmallows could be made from scratch. I am not that person.
Here's what you'll need:
1 package of large marshmallows
12 oz of dark chocolate (I used 60%)
1 cup flour
1/6 cup brown sugar
2/6 cup white sugar
1/2 tsp baking powder
1/4 tsp salt
1/8 tsp cinnamon
2 TB vanilla extract
1/2 stick unsalted butter, melted
2 egg yolks
In small bowl, sift the flour. In another bowl, whisk together sugars, baking soda, salt, cinnamon and vanilla. Add melted butter and stir until nice and smooth. Add the egg yolks. Finally, stir in flour.
Preheat oven to 350F. Line cookie sheet with parchment or silicon mat.
I used half a small scoop - roughly 1 tsp - and shaped cookies into balls and squashed them between my hands. You can space these quite closely on the sheet, as they won't spread.

Bake for approximately 12 minutes, rotating the sheet halfway through to ensure even baking. In the last minute or so before the cookies are ready to come out of the oven, take your marshmallows and cut them into even thirds. I used a kitchen scissors, worked like a charm.
After you've removed the cookies from the oven, place the marshmallow pieces on them while they are still hot so the mallows adhere.

Let cool a bit, then melt your chocolate in a double boiler. Dip in the way that works best for you - I dipped the bottom in first, then placed each cookie on a fork in my left hand and spooned the melted chocolate on top.

Allow chocolate to set, then try to only eat one.
Bonus for this recipe: egg white sandwich for dinner! :) Another bonus: I used the leftover chocolate to coat some freeze-dried strawberries I happened to have, for treats at a future date.
