Go-to meals

Does anyone have any go-to meals they turn to when they just can't be bothered to plan ahead? For me, I have a rotation of:

Tostadas - usually black bean (which, yeah, does take forethought unless you do canned beans - I don't), cauliflower and broccoli. So easy: mush the beans up a tad, mix in some salsa (homemade quick salsa also a fav) and par-cooked cauliflower. Toast a corn tortilla, pile on your bean/veggie mix and top with a little cheese. Bake until the cheese is melty. Ooommmmmmmnommmm.

Quick pizza - toast a bun or bread or those little thin sliced bread with a teensy amount of butter with garlic. Slice a tomato, sprinkle on pizza seasoning, top with cheese and whatever other items you like. Bake until the cheese is melty. Ooommmmmmnommmm. Serve this with a healthy side of roasted veggies and you're good to go.

Cauliflower mac and cheese.

Eggs with spinach, topped with salsa.

Cheater tacos - usually chicken or black beans cooked with taco seasoning (never buy this, it's so easy to make!), topped with heaps of spinach and tomato.

Pasta with broccoli, tossed with olive oil, pepper and parmesan.

Oh, crap, no wonder I can't lose weight (besides not trying). You see frequent ingredient there? Mmmmm, cheese. LOL.


I'm just curious what other people throw together. I need ideas!
